The possibly underrated beverage of Goa, Kokum juice, has been reinvented! This refreshing drink/ digestive aid is usually available in packaged bottles. The pulp is used to extract the juice. However, the rind is just thrown out.
To deal with this, Dr Balasaheb Vidhyapeeth invented the kokum powder dip bag! It has been given a patent and will be in the market soon! Kokum rind has antioxidants and hydroxycitric acid. It is powdered and put in dip bags, similar to tea bags. It can be mixed with hot/ cold water and sugar to create an interesting beverage.
As it is the summer season, kokum fruits will be harvested and collected to prepare the dip bags. Other than this, their institute will be marketing rice gruel (pez) in soup form and different variants of raagi biscuits and cashew nuts.
