Set in an old colonial bungalow in the by lanes of Panjim, The Black Sheep Bistro (BSB) is a delightful find. Prahlad and Sabreen Sukhtankar’s labour of love, BSB has all the trappings of a great eatery. Chic minimalistic interiors, soft music and an elegant set up that promises nothing less than a fantastic evening. Since both Prahlad and Sabreen have been in the hospitality business for most part of their careers in India and abroad they bring with them a unique sensibility of marrying the local with the global. The menu has been painstakingly crafted using this philosophy of sticking to local produce and flavours and giving them an international twist. The end result is that you will find dishes on the menu that are not intimidating but rather familiar and in most cases comfort food even. These are then carefully infused with flavours from around the world that transform them into a fusion that works surprisingly well. The Inspired Chorizo –Pav at BSB is one such creation where the very local and humble Goan Chorizo is served with caramelized onions and dark chocolate shavings. The Tataki , a dish of local Tuna fillet with a croele rub and a citrus ginger –soy vinaigrette is a must try for sure as is the tapas serving of Quail eggs with Kismoore Butter. The ‘evolving’ menu consists of tapas, small bites, main course and a small selection of desserts with each section highlighting local produce taking forward their commitment to the ‘Farm to Plate’ philosophy. So don’t be surprised if you find Tendli pickle, Tambdi bhaji, Saranga, Chonak and Tisryo soup on the menu. The ingredients are fresh, sourced locally adding their unique seasonal flavours to the line-up of dishes.
Prahlad is well known in wine circles as a Sommelier to reckon with. His knowledge and passion for wines and whiskies is evident from the stellar cellar at The Black Sheep Bistro where the wines are selected carefully highlighting the different grape varietals and the whiskies represent the different regions of the world. Boasting of the largest beer list and variety in Goa BSB is a beverage connoisseur’s delight with all its fine offerings.
