The thought of summers in Goa throws up memories of juicy mangoes consumed in various forms, milkshakes, ice creams, pastries, juices and more. Mango being the king of all fruits reigns in our hearts and holds a special place. Childhood memories are often about having lots of fresh sweet mangoes with friends and family.
Here is a simple Mango Kulfi recipe by Chef Patrick, Head Chef at Verna based Kamaxi College of Culinary Arts (KCCA) affiliated by Goa University. Chef Patrick Albert is also a Maître Cuisinier de France, member of the famous Academie Culinaire de France.
Mango Kulfi
Preparation Time: 30 minutes
Serves 04
Milk (1.5 litre)
Sugar (70 grams)
Ripe mangos (6 nos)
Almonds, sliced (3 tsp for garnish)

Method:
Deseed the mango with a small knife, scoop out the flesh with a spoon and smash it into a pulp
Boil milk in a pan, add sugar and reduce it to a single boil
Add the mango into the mixture and stir well. Pour into kulfi moulds and set for 24hrs in the freezer
Serve with slices of fresh mango and garnish with almonds
